Lycopene is a red pigment that is responsible for giving a variety of fruits and vegetables their color. Notably lycopene is found in apricots, pink grapefruit, watermelon, papaya and in especially high concentrations in tomatoes. It has been found that cooking and processing tomatoes actually increases the bioavailability of lycopene. It is for this reason that tomato sauces, like pizza and spaghetti sauces, have been linked to lycopene’s beneficial effects.
Lycopene is an important carotenoid for optimal health. It is the major carotenoid in human plasma at levels almost double that of beta-carotene. Compared to beta-carotene, alpha-carotene, and other carotenoids that have been studied, lycopene is the most potent antioxidant in quenching free radicals.
